Pork~ the other White Meat

As I wrote earlier this month, my family will be taking a Disney Cruise in the spring. I am super excited about this cruise, but would like to be able to wear a two-piece which is something I haven’t done in nearly 10 years. As part of my incentive to take this trip, I have made a deal with myself to drop 10 lbs. While this might not seems like much, for me it is a huge deal. Part of how I plan of doing this is by watching what I eat.

Being a mom of two, it is hard to find “healthy” meals that everyone will eat. The challenge is to find lean cuts of meat that will provide the protein I need to not be a grouch and will also be tasty enough to satisfy my picky eaters.

So when I was contacted by The Motherhood & Costco to spread news about National Pork Month, I was thrilled because Pork is “the other white meat.”

October is National Pork Month and being a North  Carolinian, I know a little about pork.  What I didn’t know is that pork tenderloin is as lean as a skinless chicken breast!  This will be a great addition to my menu.  Beginning October 17th, in honor of National Pork Month, you can get $2.00 off a package of pork tenderloin when you shop at Costco.  I know I’ll be getting in on that deal and will also be sharing my experience cooking and serving it to my family later in the week.
